When the City of Las Cruces decided to dedicate the pavilion at Plaza de Las Cruces for Roberto V. Estrada, they didn’t just give him a plaque, they gave him the “whole enchilada,” his name all across the top of the stage.
Fitting for the man who created the Guinness Book World Record for the largest flat enchilada, and re-created it for many years at Las Cruces’ Whole Enchilada Fiesta.
And there was indeed a plaque as well, situated on the east pillar of the stage, telling the story and achievements of Estrada.
At the event, family and friends told stories of Estrada’s support for local sports teams, political candidates (but all sides, not just one) and the community at large.
As the plaque reads, “His passion and pride for his business and unending generosity will forever be remembered.”
