On the evening of Oct. 3, the Las Cruces Convention Center transformed into a realm of mystery and elegance for the much-anticipated “Chef Creates: Midnight Masquerade.”
Greeted by mysteriously masked waiters, guests arrived in formal attire, their faces adorned with ornate masks, stepping into a world where culinary artistry met theatrical charm. The cocktail hour presented guests with delightful drinks and appetizers such as delicate pastry shells filled with caviar, and a bold bruschetta.
Chef Armando, the evening’s maestro, orchestrated a multi-course dining experience that was nothing short of spellbinding. Each dish was a chapter in a story of autumnal flavors and refined indulgence.
The night began with a wilted purple kale salad, a vibrant composition of crisp apples, toasted pepitas, tart cranberries, and pomegranate, crowned with shavings of manchego and kissed by a champagne vinaigrette. It was a refreshing overture that awakened the senses.
Next came the fall harvest broth with farro and spinach, a warm and earthy potion infused with broccoli, leeks, and fall herbs. The tender farro grains and delicate spinach leaves floated like secrets in a cauldron, evoking the comfort of a forest in twilight.
The main act, a surf and turf duet, was a dramatic pairing of grilled tip sirloin cloaked in a deep red wine demi-glace and a delicate lobster brushed with herb butter. Accompanied by layered potatoes au gratin and a vibrant palette of roasted carrots, golden beets, and green beans, it was a feast fit for masked royalty.
Dessert was a finale of dual delights: the tuxedo masquerade cake, rich and decadent, and the vanilla panna cotta en masque, a silky, mysterious treat that melted like moonlight on the tongue.
Throughout the evening, wine pairings elevated each course, enhancing the flavors and deepening the enchantment. The ambiance—dimly lit, elegantly dressed, and filled with laughter behind masks—was a perfect complement to the culinary magic.
Guest Crystal Tapia was delighted with the evening.
“I love Chef Creates events. They allow you permission to be yourself,” she said. “I am never let down. I look forward to each event, excited about my palate being explored. I can be present with the food. It makes me feel like I am on a cruise far away from my daily life.”
Chef Armando arranged entertainment as well, with a gorgeously dressed couple waltzing around the dance floor to the live music of a string quartet, reminiscent of a dancing centerpiece on a delicate jewelry box.
Chef Creates: Midnight Masquerade was more than a dinner—it was a journey into a world where food, fantasy, and finesse danced together in perfect harmony. A triumph of taste and imagination, it left guests spellbound and already dreaming of the next chapter.
