Vegan reinvented- a night that changed my expectations

Posted

Walking into The Chef Creates: Rooted in Global Spice event at the Las Cruces Convention Center felt like stepping into something special. It wasn’t just dinner — it was an experience from the very first moment.

The lighting was low and warm, giving the room a cozy, almost romantic feel, while subtle Middle Eastern touches made the whole space feel inviting and just a little transporting. It struck that perfect balance between intimate and polished — somewhere you could relax, connect, and really enjoy every bite.

Right away, it was clear that Chef Armando wasn’t just cooking, he was telling a story. Everything about the evening felt intentional.

During cocktail hour, guests were greeted with roasted baby Yukon potatoes topped with tzatziki, paired with a crisp Benvolio Prosecco. It was a simple start, but it hinted at what was ahead: bold flavors, thoughtful combinations, and a real sense of balance.

In addition to a perfectly paired wine with every course, the use of spices throughout the night was what truly stood out. The entirely vegan menu traveled across global flavors in a way that felt exciting without ever being overwhelming.

The Berbere roasted carrots were a highlight, rich with warm Ethiopian spices, layered over a smooth white bean purée, and finished with orange zest and pistachio for just the right touch of brightness. The za’atar grilled eggplant brought a smoky depth, perfectly matched with a lentil salad and a pop of sweetness from a pomegranate reduction.

As someone who doesn’t usually embrace a vegan approach to meals, the experience was truly eye-opening. Each dish challenged my expectations in the best way.

The sweet pea and caramelized onion ravioli felt both comforting and fresh, thanks to a light lemon oil that kept it from being too heavy. The spice-roasted tri-colored cauliflower, paired with black bean purée and ancho chile oil, delivered bold, satisfying flavors that didn’t feel like a compromise at all.

Dessert might have been the biggest surprise of the night. The spicy chocolate watermelon shell combined compressed watermelon with rich dark chocolate mousse, finished with chile-lime dust and walnut crumble. It sounds unexpected — and it was — but it worked beautifully. It perfectly captured the spirit of the evening: creative, balanced, and full of surprises.

Beyond the food, what really made the night memorable was the energy in the room. Chef Armando’s passion came through in every detail, and it carried over to the guests. People were talking, sharing reactions, and connecting with each other in a way that felt genuine. It wasn’t just about eating — it was about experiencing something new together, and Chef was there with us every step of the way.

Chef Armando truly stands out. His Chef Creates series feels personal, thoughtful, and full of heart. Every course, from the first bite to the final sip of coffee, reflected care, creativity, and purpose.

This wasn’t just a great meal, it was a glimpse into a different way of experiencing food. Even for non-vegans, it offered a chance to step outside the usual and discover just how flavorful and satisfying plant-based cuisine can be.

Simply put, it never disappoints. And after a night like this, it’s hard not to be excited about what Chef Armando will create next. See you there.
